National Organic Bread Competition: The 2022 Edition

The 11th annual national organic bread competition, of which Grands Moulins de Paris is a partner, will be held on Tuesday, October 11, 2022, in Paris.

As an artisan baker, this is your chance to showcase your expertise!

 

To participate in this 11th edition, you must register by October 7, 2022, and then submit your entry on Tuesday, October 11, 2022, between 11:00 a.m. and 1:00 p.m. at the Greater Paris Bakers and Pastry Chefs Association, located at 7 quai d’Anjou, 75004 Paris. 

 

This year, there is no specific bread category. The jury will select a winner from a single entry consisting of two identical organic loaves with no seeds incorporated into the dough or used as decoration.

Each organic loaf of bread must meet the following criteria:

    • weight between 500 grams and 600 grams maximum when cooked;

    • salt content of less than 18 grams per kilogram of flour;

    • ball-shaped , without seeds mixed in or used as a decoration;

    • complies with the regulations governing organic bread;

    • All organic flours are accepted.

 

The judging panel will consist of professionals and food connoisseurs who will assign scores based on the following criteria: taste, doneness, crumb structure, aroma, and visual appearance.

You can enter the National Organic Bread Competition by sending the registration form to the Greater Paris Bakers and Pastry Chefs Association: 7 quai d’Anjou, 75004 Paris.
