National Organic Bread Contest: the 2022 edition
The 11th edition of the national organic bread competition, of which Grands Moulins de Paris is a partner, will be held on Tuesday, October 11, 2022 in Paris.
As an artisan baker, this is an opportunity to showcase your expertise!
To participate in this 11th edition, you must register before October 7, 2022 and then submit your production on Tuesday, October 11, 2022 between 11:00 am and 1:00 pm to the Union of Bakers and Confectioners of Greater Paris at 7 quai d'Anjou 75004 PARIS.
This year, there is no particular category of bread to produce. The jury will make its choice on a single batch of two identical organic breads without seeds incorporated or in decoration.
Each organic bread must meet the following characteristics:
- weight between 500 grams and 600 grams maximum cooked ;
- salt content less than 18 grams per kilo of flour;
- ball form without seed incorporated or in decoration;
- complies with the regulations applicable to organic bread;
- all organic flours are accepted.
The jury will be composed of professionals and gastronomes who will establish marks according to the following criteria: taste, cooking, crumb, smell and visual aspect.
