Grands Moulins de Paris has unveiled its new all-purpose flour blend, the “Cranberry Bread,” on February 11 and 12, 2024, at the Rest’Hôtel & Métiers de Bouche trade show. We are proud to have won this Innovation Award for this bread, which is unique in that it satisfies everyday cravings beyond festive occasions, thereby allowing bakers to expand their in-store offerings. Produced at the Briare facility, this baker’s mix—rich in gourmet ingredients (cranberries, raisins, and hazelnuts)—stands out for its mild, sweet notes combined with a soft, distinctive crumb thanks to the rye flour.
This Rest’Hôtel Innovation Award recognizes the collaboration between different departments and the expertise of our specialists at the Confrérie des Boulangers Grands Moulins de Paris, the quality of our flours, and our expertise in recipe development that are being recognized.
A bread mix for making gourmet breads
Made at the Briare mill, this miller's blend is packed with delicious ingredients. It contains 14% cranberries, 6% raisins, and 3% hazelnuts.
This product is characterized by the sweetness and tartness of the cranberries, combined with a soft, distinctive crumb created by a blend of wheat and rye flour.
This blend also aligns with current trends by meeting the expectations of consumers and our clients:

This blend allows us to cater to a variety of occasions: cranberry bread is perfect for festive occasions while also satisfying everyday cravings.
Cranberry bread is versatile and can be shaped into a variety of forms. Different variations are featured in thefestive recipe bookletdistributed to our customers as part of the 2023 holiday workshops.

Product display in-store
To support the launch of our Cranberry Bread and highlight it in-store, we are providing our bakery customers with a display stand and a festive poster.
