ID Ingredients, Grands Moulins de Paris's ingredient brand dedicated to manufacturers in the bakery, pastry, and catering industries, once again participated in the CFIA trade show from March 4 to 6, 2025, at booth C 35 in hall 4 in Rennes. We showcased our full range of technical and sensory ingredients, including ideal solutions based on cereal ingredients and malt extracts to help you create new products and meet current market challenges.
Malt extracts: a new textural and taste experience

A range of malted ingredients for numerous applications
We offer roasted barley malt flour in powder form as well as malt extracts in various forms, including "liquid," "spray," and "crystals," with several levels of enzymatic potency and color nuances to suit all needs and applications: baking, pastry making, beverages, cereal bars, ice cream, chocolate, etc.
Malt extract is obtained through a rigorous selection of grains mixed with water using a grain extraction process based on over a century of expertise. A small amount of malt extract gives each recipe a distinctive character and unique flavor. In baking, for example, malt extracts provide:
– A unique taste: malt extract enhances and boosts the aroma by adding characteristic notes of malt, caramel, hazelnut, and honey.
– A unique color: the amino acids and sugars in malt extract allow for intense, uniform coloring in less time during cooking.

DIACHOCO: malt extracts combined with cocoa
In a tense market context, faced with price volatility and the lack of availability of certain raw materials, the agri-food sector has the opportunity to reinvent itself by focusing on alternative ingredients such as malt extract to continue delivering high-quality products. When used in combination with cocoa, malt extract enhances the aromatic nuances of cocoa, making desserts and baked goods even more intense and indulgent.
DIACHOCO was created to meet this market need: a range of malt extracts that enhance and/or reduce the amount of cocoa in recipes, ensuring a rich taste experience. It consists of four products with unique flavors and colors: DIACHOCO "crystal" and "spray," two brown products with notes of cooked fruit, plum, and smoke, and DIACHOCO DARK "crystal" and "spray," two dark brown products that amplify the toasted and smoky notes already present in cocoa. “Hey Bro!”: the new innovative brownie mix
Faced with the volatility of cocoa prices and the challenges this poses in terms of availability, "Hey Bro!" is a brownie mix that offers a ready-made, practical solution on the market. Our membership in the VIVESCIA Group, a leading French grain cooperative, guarantees us complete control over the grain supply chain and a variety of ingredients derived from wheat, corn, and malt. Thus, by combining the expertise of three companies within the Group, "Hey Bro!" is designed with:
– 100% French wheat flour from Grands Moulins de Paris, produced using its century-old milling expertise,
– Kalizea toasted corn germ flour, produced by cooking corn germ, which adds delicious notes of hazelnut and toasted cereal to recipes and gives them a unique flavor profile,
– and Diachoco Dark Spray malt extract from Diamalteria Italiana, specially designed to work in synergy with cocoa to achieve an unexplored flavor: notes of toasted malt, vanilla, and umami.
The preparation is formulated, produced, and blended by ID Ingredients at the Grands Moulins de Paris mixing station in Briare (45).
