Let me introduce myself
"Eric Collavini, I'm 56 years old, I've been National Manager Transactions and Financing since July 2017. I joined the Grands Moulins de Paris very young, it was 30 years ago, I was 26 years old. I returned to the mill in Revel, to take care of the transaction on the Midi-Pyrénées and Languedoc-Roussillon regions. In 2013, I joined the headquarters to lead the transaction at the national level."

SINCE WHEN AND WHY DID YOU JOIN GRANDS MOULINS DE PARIS ?
I joined the company through a friend who worked at the Bordeaux mill. He told me about a position that would suit me perfectly, that of business transaction. That was in December 1991. I still thank him warmly today, he was not mistaken. Accompanying clients in their project to sell or acquire bakeries has always been the essential and motivating mission of my career. I discovered a fascinating profession, rich in encounters and knowledge.
NATIONAL TRANSACTIONS AND FINANCING MANAGER: WHAT DOES YOUR JOB INVOLVE?
Today, my job consists of helping our teams, and more specifically our 25 specialists, to carry out transactions for bakery businesses. There are 4 verbs that define my activity: animate, accompany, help and train.
WHAT IS YOUR DAILY LIFE LIKE?
My daily work is very varied. I help employees solve technical problems. I provide training, passing on my knowledge both internally and externally to students from the Paris Bakery School who are planning to take over a bakery. I work in cooperation with other internal departments to develop tools specific to our profession. My daily routine is above all teamwork.
WHAT IS YOUR PROUDEST ACHIEVEMENT SINCE YOU JOINED THE COMPANY?
My job has a real meaning, that of participating in the renewal of the number of our artisan bakers. My greatest pride is to see the success of the entrepreneurs we accompany in their installation project. It is to see the added value that we bring to our clients through our expertise, and to establish a relationship of trust with them.
YOUR FAVORITE PRODUCT OF GRANDS MOULINS DE PARIS ?
I have several favorite products, each of which corresponds to a time of day. If I have to pick one, it's Campagrain. I love it grilled, for its flavors, with smoked salmon and lemon juice. A treat for the taste buds!
